Why does 年 look like this?

Originally, this character was a pictograph of a person (人) carrying a stalk of grain or harvest (禾) on their back. Over time, it evolved into its current form. It represents the cycle of the harvest, which is how 'year' came to be defined! Today, you can see the '禾' (grain) radical buried within its strokes.
