Why does 油 look like this?

The character consists of the 'water' radical (氵) on the left and the phonetic/meaning component 'cause/source' (由) on the right. Historically, it referred to the 'Yu River', but because oil is a liquid that flows like water, the 'water' radical was used to create the modern meaning of 'oil' or 'fat'.
